Nutritionist and digital content creator Aathira Sethumadhavan shared her recipe on Instagram, promising indulgence without the calorie overload.

Aathira describes her firecracker popcorn chicken as “crispy, spicy, slightly sweet, and insanely addictive”, something that “feels like takeout” but fits in with fitness goals.

This dish features chicken bites tossed in “a buttery mustard firecracker sauce”.

The garlic yoghurt dip provides a cooling contrast.

It tempers the heat while adding extra protein. It also provides contrast to the sweet and spicy glaze.

Each serving provides 38 grams of protein, 12 grams of carbohydrates, and nine grams of fat. It clocks in at around 292 calories, making it a high-protein, controlled-calorie option for those tracking intake.

The recipe, which makes four servings, balances lean protein with bold seasoning. It uses boneless chicken thigh for tenderness while relying on air frying instead of deep frying.

For larger batches, oven baking is preferred.

Ingredients

  • 400g boneless chicken thighs, cut into small cubes
  • 1 tsp garlic powder
  • 1 tsp garlic paste
  • 1 tsp chilli powder
  • ½ tsp ground pepper
  • ¾ tsp salt
  • 1 egg white
  • 2 tbsp cornflour
  • Oil spray
  • Chopped spring onion (to garnish)

Firecracker Sauce

  • 1 tbsp light butter
  • 1 tsp garlic paste
  • 1½ tsp chilli flakes
  • ½ tsp chilli powder
  • A pinch salt and pepper
  • 1 tsp honey
  • 1-2 tsp mustard sauce
  • 3-4 tbsp hot water

Method

  1. In a large bowl, mix the chicken with garlic powder, garlic paste, chilli powder, ground pepper, salt, egg white and cornflour. Cover and refrigerate for at least 20 minutes.
  2. In an air fryer tray, spoon the chicken bites in an even layer and cover with oil spray to prevent sticking. Air fry at 200°C for 12 to 15 minutes, shaking halfway, until golden and crispy.
  3. Alternatively, oven bake at 220°C for 18 to 22 minutes, flipping once.
  4. To make the firecracker sauce, melt butter in a saucepan on low heat then add garlic and fry.
  5. Add chilli flakes, chilli powder, salt and pepper. Mix well.
  6. Reduce the heat and add honey, mustard, and hot water. Simmer for two minutes until the sauce has slightly thickened.
  7. Once done, remove from the heat, add the cooked chicken to the pan and toss to coat.
  8. To make the garlic yoghurt sauce, mix Greek yoghurt, garlic paste, salt, pepper, honey, and the chopped greens of spring onions.
  9. Garnish the chicken with spring onions and serve.
