- 1 sprig mint
- ½ Lemon
- Sea Salt
- Black pepper
- 2 ounces buttermilk
- ¾ cup water (chilled)
- Ice cubes
Method
- Rinse the mint, shake dry and pluck the leaves.
- Squeeze the lemon juice onto a plate and use it to wet the rim of a glass.
- Place the salt on a plate and dip the rim of the glass in salt to coat.
- Combine the remaining lemon juice and a pinch of sea salt in the glass and season with pepper.
- Blend the buttermilk and water then pour into the glass. Crush the ice cubes and add to the glass.

- 3 sprigs of basil

Method
- Wash the chilli pepper then pat dry and cut into half. Remove the seeds and finely chop.
- Wash the basil, dry and remove the leaves. Leave some for garnishing but chop the rest.
- In a bowl, mix the chilli and basil with olive oil. Whisk in the buttermilk and season with salt and pepper.
- Pour into two glass and refrigerate for 15 minutes.
- Squeeze the lemon and add a tablespoon to the tomato juice. Season.
- Remove the glasses from the fridge and slowly pour in the tomato juice down the back of a spoon. Garnish with basil and serve.
