DESIblitz has adapted this versatile recipe from Madhur Jaffrey’s Indian Cookery by Madhur Jaffrey to create a perfect rice dish. Give it a go below:
- Rice measured to 425ml
- A splash of oil
- 50g onion, finely diced
- ½ a green chilli, finely diced
- ½ tsp crushed garlic
- ½ tsp garam masala
- 1 tsp salt
- 570ml chicken or vegetable stock
- Wash the rice.
- Heat the oil in a saucepan and fry the onion until it begins to brown.
- Add the rice, chilli, garlic and salt. Fry for 3-4 minutes until the rice is coated in oil.
- Add the stock and bring to the boil.
- Reduce heat to low and cover the pan. Simmer for 25 minutes, leaving the pan covered for the duration.
- Fluff the rice and enjoy with your favourite curry!
