Chickpea Patties with Curry Mayonnaise

Perfect for a light snack or served with chips, salad, or rice.

These patties, inspired by the Food Network’s recipe are the perfect balance of sweet and spice. Want to find out how to make them yourself? Find out below:

Patty Ingredients:

  • 1 large sweet potato (peeled and cubed)
  • ½ cup roasted cashews
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice
  • ¼ tsp salt and pepper
  • 1 egg
  • 1 can chickpeas (drained and rinsed)
  • 2/3 cup of dry breadcrumbs
  • ¼ cup of fresh cilantro or parsley (chopped)
  • 1 tbsp olive oil

Curry Mayonnaise Ingredients:

  • ½ light mayonnaise
  • 2 tsp lemon juice
  • 1 tsp curry paste/powder

Method:

  1. In a pot of boiling, salted water, cook the sweet potato until tender. Drain and cool.
  2. Using a food processor, grind the cashews, onion, garlic, lemon juice, salt and pepper.
  3. Add sweet potato and egg. Puree until smooth.
  4. Add chickpeas, half the bread crumbs, and the cilantro. Pulse to combine (Chickpeas should remain chunky).
  5. With wet hands shape the mixture into 6, 1 inch thick patties.
  6. Pat both sides with remaining breadcrumbs to coat.
  7. Place on greased baking tray and refrigerate until firm, at least 30 minutes.
  8. In a large non-stick skillet, heat oil over medium heat. Fry patties for 10-12 minutes, turning once, until cooked thoroughly and light brown on the outside.
  9. In a bowl stir mayonnaise, lemon juice and curry powder to create the mayonnaise.
  10. Serve patties on pitta bread or rolls topped with the curry mayonnaise, tomato, and lettuce.
