A comforting and simple dish which oozes flavour, this is one to try when you need a real pick me up.
- 4 cups water
- 1 cup yellow split peas
- 1/2 cup diced tomatoes
- 3 tbsp. oil
- 1/2 tsp. cumin seeds
- 1 chopped onion
- 1/2-inch piece grated ginger
- 2 cloves minced garlic
- 1 cinnamon stick
- 2 bay leaves
- 1/2 tsp. turmeric
- 2 crushed cardamom pods
- 1 tbsp. butter
- 1/4 cup chopped coriander leaves
- Salt and pepper
- Add the water, split peas and tomatoes to a saucepan. Simmer over a low heat until the peas have softened.
- Heat the oil in a large pan over a high heat and add the onions. Cook until browned.
- Add the ginger, garlic, cinnamon, bay leaves and cardamom.
- Pour in the split pea mixture.
- Add the butter, coriander and season to taste.
- Stir together and serve.
